Jane’s Original Game Pie
Use any wild game; squirrel, dove, rabbit, woodcock, grouse, etc. cooked until tender. It’s even better if a combination of several of the above. In other words, whatever you have in the freezer or whatever you harvested that day.
6 frozen biscuits thawed
2 cans green or shelly beans
2 cups brown rice cooked
2 stalks chopped celery and one chopped onion sauteed in oil
1 cup white wine
1/4 cup lemon juice
1 can evaporated milk
Season with Tony Chachere’s seasoning
and a little garlic powder to taste
Cook meat in crock pot until tender. Cut meat off the bone. Make a gravy from the broth in a saucepan using 3 to 4 tablespoons flour whisked into lukewarm broth. Add a can of evaporated milk to make it rich. Add all the other ingredients along with the meat. Pour into a greased baking dish. Top with partially thawed biscuits cut in half. Bake at 350 degrees for 30 minutes. If needed cover with foil to prevent burning.
